A quick reminder that this game is WolfQuest, not CoyoteQuest, hence why you cannot play that species regardless of its presence in a simulation designed to teach its players about wolf ecology. As a result, this suggestion has nothing to do with this Wiki's focus, so I'll close it. (There was almost a playable elk game mode in multiplayer fwiw.)
The closest you can come to "playing as" a coyote in WQ is with the original red coat and the smallest possible size, but that's really all you can do; there are no ear or muzzle modifiers.
I'd also like to add that the WolfQuest Wiki is not the place for ideas for new updates and future episodes, so please use the official resources for that intention instead-
What you're asking for would be another <Animal>Quest game. The FAQ entry does state that this is not a priority due to the team's limited funding. It hasn't yet been updated in years so unfortunately I don't know if it remains valid.
